Everyone has a thing for desserts, there is definitely no denying about it. Whether is it a favourite lemon curd or a decadent dark chocolate truffle, there always will be room for it. So when we found a new burgeoning cafe that was popping out in the East, we could find no reason but to brave the rainy weather to visit De La Crème.

Nestled in the heart of Siglap and Frankel Estate is the hidden gem that is De La Crème. It may be a little difficult to tease through the roads to discover this place, but we assure that it is well worth the trouble. The newest kid on the block with only about three months into the business, De La Crème has received rave reviews from both word-of-mouth and media, appearing in 8 Days, local television shows as well as the Straits Times. This is definitely one cafe to keep a lookout for.

The cafe is opened by Chef Rayner Tan, 22. His age deceives all impression because his wealth of baking experience rivals some of Singapore’s top dessert chefs. Following his academic studies in Singapore Management University, he took time off his studies here to pursue his true passion which was Pastry. What started out as simple baking at the tender age of 12, he went on to train under Le Cordon Bleu in Paris, France, and later on at the Carpigiani Gelato University in Bologna, Italy. Like what they say, if you want to pursue your talent, you should only follow the best.

After completing his training overseas, Rayner came back to Singapore to stint for some of Singapore’s most critically acclaimed bakeries and restaurants such as Canelé and 2am:dessertbar. Maybe it was his Peranakan heritage that followed the line through his mother and grandmother but something fueled the drive for Rayner to open up a place to offer the mahic of French pastries to our local tastebuds; utilizing only the finest and freshest ingredients imported from Europe.

Together with his cousin and partner, Cheryl Kwok, they bring forward De La Crème with one true philosophy- to grant people the capacity of the joy and magic of taking that first bite into a great-tasting dessert. Granting people happiness through nostalgic tastes brought out through technically superior French pastry techniques is one thing that they aim to do.

After having our fill of macarons and a well executed Lemon Meringue Pie, we sat down with Rayner to find out more about him and just what Christmas means to this talented chef.
